Dumplings and noodles are soft, sticky and easily marked before they freeze. The belt has to support them gently and let them go cleanly.
Dumpling and noodle freezing lines usually run a Spiral Freezer Belt on drum-driven spirals or a Self-Stacking Belt on self-stacking spirals. Choose spiral geometry first, then pitch and surface for soft, sticky dough products, clean release at the outfeed, flour and starch residue, and the cleaning routine. Confirm everything on a drawing.
We are YIYI Mesh Belt, a metal conveyor belt manufacturer in Ningjin, Dezhou City, Shandong Province, China. Our manufacturing experience dates back to 1998, and we work on a 27,000 m² site with about 280 units of production and supporting equipment, including 9 welding robots. I am Sunny Ye. Frozen dumplings, buns, noodles and similar dough products are among the most demanding products for a freezer belt: soft going in, firm coming out, and sticky in between.

Which Belts Are Used for Dumpling and Noodle Freezing?
Most dumpling and noodle freezers are spirals, so the belt is a Spiral Freezer Belt on a drum-driven spiral or a Self-Stacking Belt on a self-stacking spiral. Straight tunnel freezers and transfer conveyors may use flat wire or woven belts. As always, the machine decides the family, and the product decides the details.

| Machine | Belt family |
|---|---|
| Drum-driven spiral freezer | Spiral Freezer Belt |
| Self-stacking spiral freezer | Self-Stacking Belt |
| Straight tunnel or transfer | Flat Wire / Honeycomb, Balanced Weave |
For the spiral belt, start with the geometry: turn ratio and drum for drum-driven spirals, stack geometry for self-stacking. Read how to choose a spiral freezer belt and how to select a self-stacking belt.
Sunny's view: Tell me the freezer type first. Dumplings change the pitch, but the freezer decides the belt family.
How Do You Support Soft Dough Products?
Soft dough products sag into large openings and pick up marks from wires. A closer pitch and an even surface support them better, while still letting cold air reach the base. Products on trays need support for the tray rather than the product. The smallest and softest product sets the pitch.

| Product | Belt consideration |
|---|---|
| Small dumplings, wontons | Closer pitch; even surface |
| Buns, larger filled products | Even support; marking on the base |
| Noodle portions, nests | Support for loose strands; release |
| Products on trays | Tray footprint and weight |
Our Spiral Freezer Belt references cover spiral pitch 5–23 mm; Self-Stacking Belt references cover spiral pitch 6 / 9 / 13 mm. The pitch for your product is confirmed on the drawing.
Sunny's view: Send me a photo of a dumpling on your current belt from below. The marks on the base tell me if the pitch is right.
How Do You Reduce Sticking and Improve Release?
Unfrozen dough sticks to a cold metal belt, especially where wires cross. Release improves with an even surface, smaller contact points, a clean and dry belt at the infeed, and a well-set transfer at the outfeed. Some lines lightly dust or pre-chill products; those are process choices for the plant and equipment builder.

- Surface: finished welds and an even surface leave fewer places to grip dough.
- Clean, dry start: residue from the last run makes sticking worse.
- Transfer: gap, angle and speed at the outfeed decide whether frozen pieces lift cleanly.
- Process: dusting, pre-chilling or trays are decided with the equipment builder.
Electropolishing can be reviewed where the project requires it, carried out by a specialist partner under our specifications. Read pickling or electropolishing.
Sunny's view: If pieces tear at the outfeed, film the transfer. The fix is often a gap or an angle, not a new belt.
How Do Flour, Starch and Filling Residue Affect the Belt?
Flour, starch and filling juices collect on the belt and between wires, freeze, and build up over a shift. Build-up reduces airflow, marks products and makes release worse. Open joints, finished welds and a cleaning routine that removes residue before it hardens keep the belt performing as designed.

- Brush or wash residue off at product changes
- Defrost and clean on schedule; remove ice from between tiers
- Rinse cleaning chemicals off completely
- Dry the belt before restarting
Salt-rich fillings or brine can stain stainless steel if left on the belt; SUS316 is worth reviewing where they are common. Read why stainless steel belts rust.
Sunny's view: Ask the cleaning team where residue builds up first. That spot tells you where to look on the belt too.
What About Load and Tray Loading?
Individual dumplings are light, but dense loading, trays and ice build-up add up, especially on self-stacking spirals where every tier rests on the one below. Tell us the load per square metre, whether trays are used and their weight, so rod size, pitch and guard height can be checked for the real load.

- Product weight and loading density
- Tray footprint and weight, if trays are used
- Ice and frost build-up between cleans
- Number of tiers and belt speed
Read what causes side plate deformation if plates on an existing self-stacking belt are bending.
Sunny's view: If you switch from direct loading to trays, tell me. Trays change the load and the support the belt must give.
What About Straight Tunnel Freezers and Transfers?
Some dough product lines use straight tunnel freezers or long transfer conveyors before or after the spiral. These usually run a Flat Wire / Honeycomb Belt or a Balanced Weave Belt, chosen for support, airflow and cleaning. The same product questions apply: softness, sticking, residue and how cleanly products transfer between belts.
- Tunnel freezers: flat belts chosen for support and airflow along the tunnel.
- Transfers: gap and speed match where products move from forming to freezing.
- Cooling before freezing: some products are chilled first; the belt must handle condensation.
Read how to choose a flat wire / honeycomb belt and how to choose a balanced weave belt.
Sunny's view: Send me the whole line from forming to packing. The transfers between belts cause more product damage than the belts themselves.
Do Buns, Dumplings and Noodles Need Different Belts?
Often the same freezer runs several products, so the belt must suit the most demanding one. Small dumplings need the closest support, large buns need even support and release, and noodles need support for loose strands. Tell us every product the freezer runs and the belt is chosen for the range.
| Product | Most demanding for |
|---|---|
| Small dumplings, wontons | Pitch and support |
| Steamed buns | Base marking and release |
| Noodle nests or portions | Loose strands and release |
| Products on trays | Load and tray support |
If the range is very wide, it may be worth discussing trays for the most delicate products with the equipment builder, so the belt can be chosen for the rest.
Product changes also matter. A new recipe with more filling, a softer dough or a different size can change how products sit on the belt. Tell us about planned products as well as current ones, so the belt still suits the line after the range changes.
Sunny's view: List every product the freezer will run in the next few years. Choosing for the range saves a second belt later.
What Should You Send for a Dumpling or Noodle Freezer Belt?
Send the freezer type and geometry, the products with their size, weight and whether they run on trays, infeed and outfeed temperatures, photos of the old belt and the products on it, the cleaning routine and chemicals, and a sample of the old belt for replacements.
Checklist
- Freezer: drum-driven or self-stacking; drum diameter or stack data; inside radius; direction; tiers
- Products: type, size, weight, trays or direct
- Temperatures at infeed and outfeed
- Photos: old belt, products on the belt, the outfeed transfer
- Cleaning routine and chemicals
- A marked section of the old belt for replacements
For formal orders we prepare a drawing for your approval, run trial production and a complete first article, and inspect every belt before packing. Drum or geometry verification is carried out where the project requires it.
Sunny's view: A photo of the products on the old belt is worth sending first. It shows support, marking and loading in one picture.
When This Is Not the Right Approach
Do not fix sticking by choosing a more open belt alone; soft products can sag and mark more. Look at the surface, the transfer and the process too.
Plastic modular belts are not part of our range. If your freezer was designed for one, changing to metal needs the builder's review.
From Our Engineering Experience
For dough product freezers, the questions we ask first are the softest product, whether trays are used and how the outfeed transfer works. Those decide pitch and surface more than the freezer size. We do not have a dumpling line case we can publish here, so this article explains our review.
